Merry Christmas!
I had a quiet but very traditional Christmas dinner/lunch at home this year.
To me there are 3 things which are essential to a proper and authentic Christmas dinner:
1) The main course must be a roast. Some people use turkey, but it is more for Thanksgiving, the most traditional dish is either ham or roast pork.
I originally planned to make a medium size roasted pork knuckle, but somehow ended up getting a 2.5kg hind leg quarter, so the dish is more like a roasted pork leg rather than just the knuckle. And I marinated it in a brine of salt, herbs and spices, vinegar and brandy for 36 hrs, so the taste and texture ended up close to a ham.
2. For a proper Christmas roast, I feel that it is very important that the meat must be very tough, preferably tasteless, like turkey breast or very dry roast pork. I think that this is a very Christian thing, denying yourself of earthly pleasures, instead, praising self sacrifice and sufferings.
By this golden standard, I passed with flying colours! While the outside meat was quite tender but very salty, especially the crackling, the inside meat was still quite tough and bland in taste.
But just like eating tough turkey breast, one can always be polite and avoid commenting on the taste of the meat. Instead, focus the priase on the richness of the stuffings, the tastiness of the gravy, or how pretty the Christmas paper napkins are. In my case, I cooked a home made apple sauce, which was indeed very good, and complemented the tough meat in a very nice and balanced manner. Of course the acidity of the apple sauce cuts through the fattiness of the meat, haha...
3. The final test of a good Christmas dinner is of course the leftover. A good Christmas roast must last for a week, and will reincarnate (sorry, wrong religion) in several different dishes, as it goes through the different phases of its karma existence.
We have already eaten this roast twice already today, lunch and then just now finishing dinner. Of course by definition, it gets better and better over time, after each rendezvous with the oven, much like an aging fine red wine (if you believe this, I've got 10 GEM board stock beauties just for you!).
Tomorrow, I very much look forward to my ham sandwich lunch, likely to be followed by a ham stew dinner. Day after tomorrow, we can still make a very nice soup stock with the bone (we don't have a dog)...
I have a very simple Christmas wish this year! Please let this pandemic pass ASAP, beacuse I don't want to do anymore #homecooking, much prefer going to Tin Lung Heen or Tak Sifu, to eat their very much NON Christmas, but much tastier Char Siu!

聖誕節快樂!
我今年在家享受了一個安靜而傳統的聖誕節晚餐/午餐。
對我來說,正確和正宗的聖誕節晚餐不可或缺的三件事包括:
1)主菜必須是烤肉,有些人用火雞,但較適合感恩節,最傳統應該用火腿或烤豬肉。
我最初計劃製作一個中型的烤豬手,但不知何故最終買了2.5公斤的後腿肉,所以這道菜更像是一個烤豬腿,而不僅是豬手。然後,我將其在鹽、香草香料、醋和白蘭地的鹽水中醃製36個小時,最終的味道和質地和火腿接近。
2)正宗的聖誕節燒烤,非常重要的是其肉質必須非常堅韌,更最好是無味的,例如火雞胸肉或非常乾的烤豬肉。我認為這是一件非常基督教的事,拒絕世俗快樂,歌頌自己的犧牲和苦難。
按這個黃金標準來說,我成功通過考驗!雖然外面的肉很嫩很咸,尤其是那個脆皮,但是裡面的肉仍然很堅韌,味道亦淡。
但是就像吃堅韌的火雞胸一樣,我們總是要禮貌地避免評論肉的味道。取而代之的是,將注意力集中在餡料的豐富性、肉汁的味道或聖誕節紙巾的美觀上。就我而言,我自製了美味的蘋果醬,充分平衡了堅韌的烤肉。當然,蘋果醬的酸度亦蓋過烤肉的肥膩感,哈哈...
3)一個好的聖誕節晚餐的最後考驗當然是剩菜。一個好的聖誕節燒烤必須能吃足一個星期,並且能轉世用來烹調不同的菜式,以幾種不同的方式輪迴(對不起,錯誤的宗教信仰)。
我們今天已經吃了兩次這碟烤肉,包括午餐和剛吃完的晚餐。當然,每次再烤會越烤越美味,就像陳年的紅酒一樣(如果你相信,我會為你推介10隻GEM板靚股!)。
另外,我非常期待明天的火腿三明治午餐,晚餐可能還會有燉火腿。後天,我仍可以用豬骨煲靚湯(我們沒有狗)...
最後,我今年有一個非常簡單的聖誕節願望!就是希望疫情盡快完結,因為對比起#homecooking煮家常菜,我更想去天龍軒或德師傅吃他們非聖誕節,但更美味的叉燒!

《Asian Polymath》 Music Album Introduction
Asian Polymath is the biggest project Namewee has ever put on, the wholly self-written album transcends the concepts of time and dimensions, it reimagines the afterlife and bestows a whole new meaning for life and death. Asian Polymath is a cognition collectives of all the previous albums, it congregates the essence from the last generation’s works. Asian Polymath is a wish from the author to honor the greats.
From 10,000 Reasons To Make Me Happy, Stop Clubbing, Our Love Is Over, Beyond The Edge and Five Hundred. These very Namewee-ish song titles have definitely got people to burst into laughters and their interest piqued. However when it comes to ‘Honoring’, the word has put Namewee into serious thoughts. To hammer the album into perfection, Namewee has had a few excursions to countries and places such as Japan, Taiwan, Hong Kong, China, Malaysia and India’s Bollywood. Through his research and mid-night grinding, he discovered the musical element which could have an ever-lasting impact on a culture’s growth. By utilizing the historical sampling and referencing techniques, Namewee inducted the element into his most recent works to woo the industry once again.
As the opening title, China Reggaeton fuses the Chinese sound with Reggae to create a unique blend of flavours yet what attracts most is the fact that Anthony Perry, the HKFA laureate being invited to feature in the song. Beyond The Edge is a song which the Hong Kong people love the most, Fu Jiu from China has a voice that strongly resembles the legendary rock band main vocals from Hong Kong – Beyond, hats off to the legends! Canon Rock 2020 is blessed to feature the song’s original creator – JerryC, the song commemorates the first wave YouTube content creators and a backstory of how Namewee rose to prominence. I Shot You shows that Namewee has limitless creativity, he wants to honour the Adult Video actresses and particularly JAV for accompanying him during his loneliest hours. Besides that, the appearance of Yua Mikami has garnered the music video a lot of unwanted attention. Do you still remember the 90s retro disco music? Stop Clubbing is a song that discourages young adults to go to such places. Head figure of Taiwan’s EDM, DJ Jerry collaborates with Namewee to rewind time back to the 90s happiest hours.
To complete the Asian Polymath formula, the finale of the ‘Asia’ albums. Unprecedented guest invitations and collaborations in the album far exceeds the industry’s common standard, in addition to the vast music genres such as Rock,R&B, Rap, Reggae, Ancient Chinese, Hindustani, Modern Pop, EDM and Disco. Nonetheless, sampling techniques, piano, guitars and strings, ancient instruments, Kompang, Sitar, Sape and countless instruments were used. Namewee greatly expanded the instrument capabilities and infused them with his creativity. During each stage of the process, the artiste was always brimming with ideas, the artist even exclaimed: ‘This project has my brain wrenched! My most time-consuming project ever!’
As a perfectionist, Namewee would always need to delve into his massive sound libraries to rummage a voicing that could match the corresponding time period, sometimes it could take weeks to filter a suitable candidate. Namewee would even go to the extreme by attempting to contact the original song producer to locate the most accurate sound but that’s just the first baby footsteps. Then, he would discuss with his arranger for ways to make the sound more modern, to fit the old blood in a new body. Asian Polymath is amazing for its preservation of the retro elements but still modern sounding aspect.
To differ ‘Honouring’ and ‘Imitating’ has its difficulties, the fine line between the 2 is ambivalent and blurry. Hence, Namewee has his own answer to such a question, he believes that by paying homage to the classics, their people and legacies would be the huge difference maker. Long story short, Namewee was already a backpacker in his college years, while he was travelling with a very tight budget in Asia, it was the classics that kept reminding him to be diligent and stoic.
The Corona-pandemic has ravaged 2020 into pieces, many were despair and despondent but Namewee persevered, thus giving birth to Asian Polymath. The word ‘Polymath’ means a person who possesses wide knowledge and talent, Namewee believes that everyone is born with talent yet true success is only granted to the most hardworking genius. Asian Polymath is Namewee’s desire for working with every talented person he came across in Asia, with burning passion comes unparalleled talent, that’s the last calling of Asian Polymath.

【3, 2, 1, ACTION!】
從我2016年6月懵懵懂懂的第一次做臉書直播,到現在有68隻影片上載在Youtube,不知不覺已有四年了。
有位二十多歲的女客人說,她和男朋友看了我早期的影片,再看我現在的影片,他們驚嘆我的改變如此的大。
是啊,我自己也沒想到有一天,我能坐擁來自世界各地三萬多的訂閱人數。
一隻影片的背後,承載著很多人的心血。
我拍片、寫稿、打扮自己,在鏡頭前的表情控制、眼神力度和說話語氣和速度,這些都是經歷了多年的千錘百鍊。有時一些影片我不滿意,隔天還會重拍。
我有一位新加坡的小幫手,他幫我做初剪,打出中英文字幕稿,然後再發給我,往往我都得再修改,才把初剪和字幕稿發給台灣的剪輯師做後製。
這整個過程需大約六個工作天。
剪輯師把完成作品發給我,經過我們一到兩輪的修改後,就是你們看到的Youtube 影片了。
都說了嘛,現在當風水命理師需要十八般武藝,要會寫會說會拍片會剪片還要會拍照⋯⋯懷念那種拿個「算命」布幡遊走街坊的日子~😂
有些觀眾問,為什麼我無法接受他們的諮詢要求。因為我並非每天都見客,每個星期裡我都得留些時間做製片的工作。
不是每個人都有能力請我,而有些是遭到身邊人的反對。我希望做到的是,每個人我都能多少幫到一點點,而我的影片就是我實現這希望的方法之一,因此很抱歉,我不會為了多賺諮詢費而不做影片。☺️
你們看我的影片,不用付費。我沒有設YouTube 會員區,也沒有啟動Youtube的廣告功能,這樣你們看影片不會被打擾。
我賺的客人諮詢費,還是足以應付我製片的費用,我無需另外啟動其他收費功能,所以小女子我在這裡感謝所有的投資商。😄
我承認,我絕對是個嚴師。有些客人在未見面時,在電郵裡的禮貌若欠佳或太隨便,會被我訓一番。
我從不勉強人,我會說如果他們不喜歡被我糾正,可以另請高明,其實出色又盡責的風水命理師,世界各地都有很多,我師父 - 玳瑚師父,就是其中一人。
往往這些被我糾正過的客人,都會選擇還是要見我,但偶爾也會遇到一些可能心裡不是很平衡的本地客人。
表面上說還要見我,但在諮詢當天會放我鴿子,給個藉口不來了。
這樣的人,看著也是可憐。一個好好的人,活到三四十歲,甚至五十歲的,怎麼這麼多不順,看來也是他她一手造成的,傲慢永遠解決不了問題,也無需爛慈悲在他們的身上。
我不會再給第二次機會,不是因為我怨他們,氣他們,我心中沒有敵人。
只是既然已經給過機會,也教導過了,他們看我影片也會獲益,我也沒欠他們了。他們放棄了原本約好的時間,讓另外一個有需要的人無法得到我的幫助,這也不是善。
那倒不如,我把這機會讓給更有誠意的人,或多拍些有益的影片服務大眾,也是一件樂事呀~ ❤️
况且最重要的是,他們都已經捐款給慈善機構了。
世界很大,要體驗的事很多,要見的人也還很多,我們都不必為不需要我們的人蹉跎青春歲月,而忘了 - 其實失去也是一種大福報。

It has been four years since my very first FB Live in June 2016 and now I also have 68 videos on YouTube.
A lady client in her 20s told me that after watching my earlier videos and then my current videos, she and her boyfriend were surprised at the big change in me.
Me too. I never imagined that one day, I would have a channel of 31.5K subscribers.
The making of a video involves the blood and tears of many people behind the scenes.
Filming myself, writing the script, dolling myself, and while in front of the camera, controlling my expressions, intensity of my gaze, speed and tone of my speech, all these took years of hammering it out.
Sometimes I get dissatisfied with the videos filmed and I reshoot them the next day.
I have a little helper in Singapore who helps me with the first cut and typing of Chinese and English subtitles. I will edit them again before sending them over to my Taiwan video editor for post-production.
When my video editor sends me the finished product, there will usually be 1 to 2 more rounds of correction and viola, that’s the uploaded video you see on YouTube.
This whole process takes about 6 working days.
Not so simple to be a Chinese Metaphysics practitioner in these social media data’s,. Must learn how to write, present, script, film, edit video, take photos......I miss those olden days of walking the marketplace with a cloth banner that says “Fortune Telling”~😂
Some audience asked me why I do not accept their consultation requests after I close my booking forms.
I do not meet clients every day, because I still need to set aside time for video production work.
Not everybody has the ability to engage me, and some are obstructed by the people around them.
My wish is to at least touch as many lives as possible in a positive way, and my videos are one way for me to actualise that. So my apologies that I would not do more consultations at the expense of my videos. ☺️
It is free for you to watch my videos. I did not turn on my Youtube channel membership or put ads in my videos, so you won’t be disrupted while watching my videos.
The fees I earn from my consultations can pay for my video productions, so I do not need to activate other monetisation models. Thank you to all my video investors. 😄
I admit I am definitely a very strict teacher. When clients lack the etiquette in their emails or are too casual, I will correct them.
I do not like to force anybody and will tell them if they dislike being corrected, they can always look for another Master. There are outstanding and responsible Chinese Metaphysics practitioners all over the world, one of them being my Shifu - Master Dai Hu.
These clients will usually choose to still meet me, but occasionally there will be some local clients who may feel emotionally imbalanced at being corrected.
While they still insist to meet me, they will stand me up on the consultation day and give some reason for their no-show.
I have sympathy for such clients. For a grown-up in his/her 30s/40s and some even in their 50s, why do they still experience so many misfortunes in their lives?
Seems like it is all self-inflicted. Being egotistical never solves problems. There is no point wasting blind compassion on them.
I never give second chances not because I bear a grudge against them or get angry at them. There is never enmity in my heart.
But since the opportunity has been given and lessons taught, plus they have also gain from my video contents, I don’t owe anything to them. They forsook our original appointment, and deprive another person from getting my help. This is not virtuous of them. Why not I give this chance to another one who is more sincere, or use the time to create more video content to benefit more people. That would be just as joyous~ ❤️
Moreover, to me, what is most important isn’t the red packet that I should have received but the donation that they have already done to the charities.
The world is vast, with many new experiences waiting for us and many more people to meet. Don’t let youth slip by us and hanker for people who don’t need us. Remember this, sometimes, losing someone or something is good fortune in disguise.
